I’ve got a Schlitter Encore with an x-eyed front calliper brake. It pulls from underneath on the left hand side of the frame. I’m trying to fit a new pair of wheels with an external rim width of 27.5mm. Unfortunately the brake will not accept rims more than 22mm. Does anybody know where I might find a replacement calliper that will take a wider rim?

No specific help, but I have modified various brakes to work this way. Not too hard if the cable entry and anchor parts can be removed. If in the UK you might look at St John Street Cycles for a wide choice of brakes.

Not sure what size of rim they fit but I think it might be worth trying a Brompton brake:-

Looks good. 8mm shaft might need drilling. Varying blocks and spacers should fit any rim. On other brakes, I filed a slot in the thread where the adjuster usually goes and put in an M6 button head screw to hold the cable. The releaser can be adapted to take an adjuster. The Dia Compes may be easiest.
